North China cuisine

Shanghai food combines traditional family style cuisine (that appeared in Shanghai over 100 years ago) and Haipai Cuisine. Main ingredients of the traditional family style food are:  chicken, Pork,  fresh fish and huge varieties of  vegetables, which  always has a great flavor and a bright color derived from the oil and soybean sauce.
The Haipai Cuisine uses Fresh fish, shrimps and crabs as  the main ingredients . The appearance, flavors and cooking style of the Haipai dishes have many variations. A large selection of seasonal appetizer like finely diced vegetables and tofu  with combination of Sesame oil , garlic, etc
The use of vinegar, subtle sweetness and oil content in many shanghaies dishes call for German Wines with firm and crispy acidity. Germany does offers an enormous wide range of Wines like pinot Gris, Riesling, etc. to suite this requirement.
One key parameter for selection of wine to pair perfectly with the shanghaies cuisine is:  the acidity level and refreshment value.  Another aspect of pairing a good wine for Shanghai food is the versatility, since it has to accompany the cold appetizer of Garlic and vinegar taste followed by other foods like steamed fish, salty dishes. A mature Pinot Noir (Late harvest semi dry) with fruit profile can meet the requirements.
